Sloppy Joe’s

  1. “Crockpot Italian Sloppy Joes” adapted from Skinnytaste.com
  • Cook 1 lb ground turkey in a skillet, breaking up into pieces, and once cooked add 1/2 cup chopped onions & 3 tbs minced garlic (comes in a jar)
  • Place ground turkey/onions/garlic into a crockpot along with 1 red & 1 green peppers chopped, 1 1/3 cups crushed tomatoes, and salt & pepper to taste
  • Cook on low 3-4 hours
  • Makes 3 servings of 1/2 cups

2.  “Skinny Sloppy Joes” adapted from Skinnytaste.com

 

  • Cook 1-1.25 lb ground turkey in a skillet with 1 tbs seasoned salt and break it up as it cooks
  • Once cooked add pre-chopped: 1 onion,  1 carrot, 4oz  mushrooms, 1/4 cup red peppers, and 2 tbs minced garlic to the skillet. Cook for 2-3 mins
  • Add 1 tbs red wine vinegar and 1 tbs Worcestershire sauce and cook for 5 more minutes
  • Add 2 cups tomato sauce and 2 tbs tomato paste to skillet and reduce heat to simmer = cook an additional 5 minutes
  • Makes 7 servings: 1/2 cup

*Tips for eating Sloppy Joes all week

  • Add 1/2 cup onto 1/2 of a bun or pita
  • Place over 250g of cooked spaghetti squash or zucchini zoodles
  • Add one serving of cheese over the top
