“Spicy Chicken Peanut Soba Noodle Salad”

Found this great recipe on the Today Show’s Facebook page, where they used rotisserie chicken in multiple ways. This recipe is almost no bake/no cook!

Sauce:

In a blender or food processor place:

  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar (or other vinegar)
  • 1 teaspoon grated ginger (optional)
  • 1 clove or 2 tablespoons minced garlic
  • 1 tablespoon honey
  • 1 teaspoon sriracha
  • 1 teaspoon sesame oil
  • 1 tablespoon lime juice
  • 2 tablespoons of water

Salad:

Cook 8 oz of soba noodles & drain. Then add:

  • 1 cup shredded rotisserie chicken
  • 1 red pepper chopped
  • 1 carrot chopped
  • 1 cup edamame peas (buy them in the frozen section, without their pods)

 

Mix in the sauce with the noodles & salad fixings. Topped with chopped peanuts & cilantro.
