“Easy Eggplant Parm”

  • Turn on broiler on High & coat baking sheet with coconut oil
  • Cut 1 tomatoes into round slices & place to the side
  • Cut 1 eggplant crosswise into 1 inch thick slices & place on baking sheet
  • Spray eggplant slices with coconut oil spray and sprinkle with salt & pepper
  • Broil eggplant until softened & browned, about 3-5 mins
  • Take out eggplant, flip over, and top each eggplant slice with a tomato slice
  • Place baking sheet back into the oven, until cooked through (10 mins?)
  • While eggplant is baking:
    • Mix in a small bowl –  2 tbs of bread crumbs, 4 tbs parm cheese, & 56g of fat free shredded mozzarella cheese
  • When eggplant/tomatoes are cooked sprinkle the cheese mixture & one basil leaf over the top of each slice& place back into oven for 3 mins

*Place two eggplant slices & 1/4-1/2 cup of pasta sauce on a chicken breast for eggplant parm!
